pesto pasta with chicken sausage

my favorite Monday meal; could not be any easier/makes you feel like you really cooked but super low effort (serve with GF noodles if GF.)

chicken blt salad

Protein packed and delicious! Tossed in a Dijon vinaigrette.

everything bagel salmon

ready in under 30 minutes! I love to serve with lemony roasted potatoes + broccoli.

chopped chicken antipasto salad

using leftover ingredients from this week’s grocery haul; plus Italian meats, artichokes - this one is filling and flavorful!

pesto caprese pizza

because it’s FRIDAY and we have leftover pesto to use up (from the pasta you made on Monday!)
